秋のサケの卵、筋子とイクラの違い

秋あきになると、サケは卵たまごを産うむために生うまれた川かわへ戻もどってきます。人々ひとびとはサケの赤あかい卵たまごを「海うみのルビー」と呼よびます。

サケの卵たまごには、「筋子すじこ」と「イクラ」の二ふたつがあります。筋子すじこは、卵たまごが薄うすい膜まくについたままのものです。イクラは、卵たまごを膜まくからはがして一ひとつずつにほぐしたものです。

「イクラ」という言葉ことばは、ロシア語ごで「魚さかなの卵たまご」という意味いみです。店みせでは、筋子すじこは塩しおで、イクラはしょうゆで味あじをつけて売うられています。
